S-Free Papain meets all microbiological limit of total microbial count and absence of
pathogens. It belongs to a family of related proteins with a wide variety of activities, including endopeptidases, aminopeptidases, dipeptidyl peptidases and enzymes with both exo and endo peptidase activity. It is a cysteine protease with wide specificity, cleaving peptide bonds of basic amino acids, leucine, or glycine. It also hydrolyzes esters and amides. It will digest most protein substrates more extensively than the pancreatic proteases. S-Free Papain has wide demand in breaking down tough meat fibres and it is integral part of meat tenderizer product, sold to supermarkets and food chains. It is also used as an ingredient in various Pharma preparations.
